TAPIOCA WITH CARAMELIZED BANANA AND CINNAMON FILLING
Ingredients (Makes 1 Tapioca)
75g (2.5 oz) of TAP nyc tapioca
1 banana – thinly sliced (1/8 inch)
½ cup of water
½ cup of sugar
Cinnamon to taste
2 teaspoon of Butter
COOKING DIRECTIONS
Melt the butter and cook the sliced bananas over medium-high heat until lightly brown, reserve it. On the same pan, add water and sugar and let it reduce to an amber syrup. Add the banana and cook for one more minute, add cinnamon to taste. Set this mix aside.
On another non-stick frying pan, add TAP nyc tapioca and spread evenly. Cook over high flame for 3 minutes. Lower the flame, and add the banana mix. Fold the tapioca in half and place on the serving plate. Spoon additional sauce over the top of the tapioca.
Tapioca with “Dulce de Leche” and White Cheddar Cheese Filling
Ingredients (makes 1 Tapioca)
75g (2.5 oz) of TAP nyc tapioca
75g (2.5 oz) of Dulce de Leche
55g (2.0 oz) white cheddar cheese - sliced
COOKING DIRECTIONS
On a non-stick frying pan, add TAP nyc tapioca and spread evenly. Cook over high flame for 3 minutes.
Lower the flame, add the Dulce de Leche and the sliced White Cheddar cheese on one half of the tapioca. Fold the tapioca in half and serve.
Tapioca with Scrambled Egg, Tomato, and Flaxseed Filling
Ingredients (Makes 1 Tapioca)
75g (2.5 oz) of TAP nyc tapioca
1 spoonful of flaxseed
1 egg
½ tomato – thinly chopped
1 teaspoon of oregano
1 teaspoon of olive oil
Salt to taste
Chop half of a tomato (without the seeds) and reserve it. Whisk the eggs and pour on a heated non-stick frying pan coated with olive oil. Cook the eggs until they are scrambled. In a separate bowl, mix the TAP nyc tapioca with the flaxseed. Add the mix to a non-stick frying pan and spread evenly. Cook over a high flame for 3 minutes.
Lower the heat to a medium flame, add the scrambled egg, the chopped tomato and the oregano on one half of the tapioca, cook for one more minute. Place on a serving plate and drizzle with olive oil.
Tapioca with Goat Cheese and Turkey Filling
Ingredients (Makes 1 Tapioca)
75g (2.5 oz) of TAP nyc tapioca
1 ½ tablespoon of Goat Cheese
2 slices of Turkey (light)
Salt to taste
COOKING DIRECTIONS
Add TAP nyc tapioca to a non-stick frying pan, spread evenly, and cook over a high flame for 3 minutes.
Lower the heat to a medium flame, spread the goat cheese on one half of the tapioca carefully to not tear. Add the turkey slices and add salt to taste. Cook for 1 more minute, fold the tapioca in half and serve.
